Vineyard Notes
Chardonnay and Sauvignon Blanc grown on the sandy soils of our southern neighbors in the Outer Coastal Plain and Cape May Penninsula AVAs of New Jersey. Rapid drainage and warmer late-Summers leads to fleshier and more tropical notes in fruit.
Production Notes
Hand-harvested, destemmed and co-fermented on skins in open-top vessels for 10 days before being lightly pressed and aged in neutral Puncheons for 7 months. No fining, light filtration. Under 30 ppm sulfites added prior to bottling. 84 cases produced.
