Raw and refreshing, this juicy sparkler boasts fine, creamy bubbles and plenty of bright fruity flavors without the funk. Hard pressings from our Methode-Champenoise project were separated, fermented very cold in stainless steel, and bottled while still fermenting to create this raw ancestral method sparkling. This wine is still alive! Please serve very chilled. No sulfites added, sediment will be present.

Vineyard Notes
Chardonnay, Pinot Noir, and Pinot Meunier from our original Meadowbrook Vineyard and our managed Cold Brook Vineyard. These vines grow in Legore Gravelly Loam and Penn-Channery Silt Loam soils in east-west orientation and varied slopes. Farmed sustainably: no irrigation, no tilling.
